This dinner was easy, yummy and took very little time from start to finish - and when it comes to cooking it doesn't get much better than that.

Paul and I have the tendency to just kinda make up dishes as we go so I don't know that I could remember the exact recipe but here's the general idea:We (1) sauteed the mushrooms, asparagus and red peppers in olive oil, salt, pepper and balsamic vinegar until just done (still crisp), (2) steamed the cauliflower for 2 minutes longer than directed and mashed them with our potato masher, and (3) coated the scallops in crushed up ritz crackers, salt and pepper and baked them at 350 degrees for 25 minutes in a greased baking dish
To plate the whole thing we started with the cauliflower and topped it with a portobello, a few asparagus spears, a few red pepper slices, 2 pieces of mozzarella and few scallops. To finish it off we chopped up the basil and mint and sprinkled a little bit of both on top.
It was AWESOME!!!
